Beef and Kidney Bean Burrito Recipe

Ingredients

  • 1 tablespoon vegetable oil
  • 1/2 pound lean ground beef
  • 1/2 cup chopped onion
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes with green chile peppers, undrained
  • 1 (8 inch) flour tortillas
  • 1/2 cup shredded Mexican cheese blend
  • 1/4 cup salsa
  • 1/4 cup sour cream

Instructions

Heat oil in a large skillet over medium-high heat. Add ground beef and onion; cook and stir until beef is browned and onion is tender. Drain off any excess fat.

Stir in cumin, garlic powder, oregano, kidney beans and diced tomatoes. Reduce heat to low and simmer for 10 minutes, stirring occasionally.

Warm tortillas in the microwave for 15 seconds. Place each tortilla on a plate and spoon beef mixture down the center. Top with cheese, salsa, and sour cream. Roll up, burrito-style, and serve.
